It is the peak time for harvesting yellow squashes. This vegetable has a mild taste on its own. If you mix buckwheat and a little of cardamom with it you will brighten the taste and flavor.
Pancakes from yellow squash with buckwheat pancake mix and cardamom.
It takes just 5 min to mix. These pancakes are very flavorful and have a delicate texture
Ingredients
For 8-10 small pancakes
2 medium size yellow squashes
1-2 cups of Buckwheat pancake mix (found in the health food aisle) depending on how juicy the yellow squashes are
2 eggs
1/2 tsp of ground cardamom
2 tsp of olive oil or vegetable oil
2 tsp of brown sugar
Oil for frying
Directions:
1. Finely shred unpeeled yellow squashes and put them in a mixing bowl.
2. Add buckwheat pancake mix, eggs, oil, sugar and ground cardamom, stir well.
3. Poor a small portion of the mixture onto the hot frying pan to form small pancakes
4 Fry the pancakes on both sides until they are light brown.
Serve hot with any syrup, jam or sour cream. This pancakes are even good on their own.
I think I'll make these for dinner tonight. I have a couple of squash I need to use up and I was looking for something different to make with them... and I've been in the mood for pancakes lately!
ReplyDeleteLeftover pancakes are great for sandwiches (grilled cheese or PB&J) or breakfast sandwiches (egg, ham & a little cheese) or just heat them in a pan with a little butter and sprinkle them with cinnamon & sugar or powdered sugar for a tasty after school snack.
